I found this recipe initially on YouTube and tried it - I became instantly hooked to this version of a Roti Recipe, soooo simple just two ingredients:
1 cup sweet potato & 1 cup flour
Boil the sweet potato and mash [including the skin] and allow to cool; Mix well with 1 cup flour. Roll out with a rolling pin [I used a clean glass bottle - had to improvise & it worked well], flour lightly the surface you're rolling out your dough to a thin rather oval to round shape. In a pan over medium heat with 2 tbsps. olive oil [brown] your flat-bread on both sides.
